So you just need to really really whisk the eggs and sugar up till its doubled in volume and is nice and moussey (by hand this could take up to 10 minutes), but after that you need to fold everything in by hand anyway so it’ll be fine! The timing increase can come in from using the wrong chocolate for the brownie base (such as switching to milk instead of dark) or not folding carefully enough etc! You can easily use another sugar in the mix, such as Caster Sugar, but I thought I'd try Light Brown Sugar this time and it was delicious!
